How many squirrels does it take to make a meal for 2?
Depends. Are they just cooking up some burgers or is it a four course meal?

A mess of squirrels to feed two. Unless you're really hungry. Then you're gonna need a whole mess of squirrels. How many squirrels does it take to make a meal for 2?
That's a good idea. I like to add a little balsamic vinegar when I soak my venison back straps.I usually add some apple cider vinegar when brining squirrel for the acidity. Not a pure brine by any means. If overnight soak, the vinegar comes after the brine in the AM.
That looks so good I'd be tempted to try seasoned squirrel thigh lollipops! My son went out last night. They will go in the freezer until we get some more then fry them up in flour and House Autry Medium Hot mix.
Another convert!I might have to sous vide a couple then fry them like chicken. Maybe a little squirrel roux to go with...
My dad always cooked it like fried chicken, after rolling it in a batter made with flour and milk. Mostly tasted like a slightly nutty, extra greasy piece of dark meat.

Brunswick stew was traditionally made with squirrel, among other critters. https://belleofthekitchen.com/brunswick-stew/
Hahaha so funny and exactly how I’d do itYeah - that's poor prep. They're actually pretty tasty when prepared correctly. We served squirrel pot pie a few years ago during Thanksgiving and everyone loved it. Until we revealed what it was, that is. Then the SIL looked like she was going to be sick after commenting on how great it was prior. MIL and FIL kept eating, though.
Ever try par-boiling them(quarters) first?I have squirrel hunted for years,, but yet figured out how to make them NOT tough.
I have quartered and fried,, and that crap was tough! It ends up with a thick rubbery and tough layer about a 1/4" thick.
How do you fry them quarters and make them tender ??
Put in an instant pot/pressure cooked for 10 mins, then pan fry. Tasty and tenderI have squirrel hunted for years,, but yet figured out how to make them NOT tough.

Yep. That’s how I’ve always had squirrel. It’s not too bad when it’s pan fried. My dad always cooked it like fried chicken, after rolling it in a batter made with flour and milk. Mostly tasted like a slightly nutty, extra greasy piece of dark meat.
