My Mom used to make Rabbit Supreme
prepared Rabbit like fried chicken and browned in an iron skillet
added tons of garlic and mushroom soup and then baked in the oven in the same iron skillet
mmmmmmm
I wish I had paid more attention to exactly what she was doing
I cooked up the rabbit and changed the basic rabbit stew (the H word).
I took the bacon, rabbit, scallions and garlic and browned them all together. I then took 2 cups of dry white wine, 2 cups of water, about 1/4 stick of butter, garlic, thyme, rosemary, salt, pepper, lemon juice, carrots and potatoes, and cooked them in the broth all together after the bacon got crispy.
Wow..oh wow. This thing was amazing. By messing around with the stock I found a good base stock for chicken and ham. It was amazing.
I also cooked the rabbit thighs and legs on the skillet with salt and pepper and that was very very tasty.
I enjoyed hassenpfeffer in Bavarian guesthouses many times and the brown "gravy" they would put on it was SOOOO good. I see bunnies every morning in my neighborhood when I go for my morning exercise(say five different ones today). This has me thinking...
