    He's definitely a butcher by trade. My Dad did this for folks years ago. He may not have been that quick, but he also didn't have a camera on him looking to see how fast he could do it. My Dad was a butcher and this guy shows a lot of the same techniques my Dad used.

    Amazing how good they look when they work. Being a butcher is a lost art.
