Hotel Night Audit fed my family for many years.
Low stress, FTMP, and usually pretty straightforward.
Unable to help directly, but can provide some advice, having had similar requirements.
As Mr. H said, night auditor isn't a bad gig. Although most audit shifts are 11-7, which may or may not give you enough time to get to class, you could still do weekend audit. (And, if your hotel has a bar or banquet rooms, the weekend shifts can be very entertaining
)
A bookstore might also be a good option, depending on your/their needs.
