We've been making chicken that way for years. We call it Berlin chicken.

The Kiwanis chicken right up the road is much better than Greenwood Firehouse in my opinion but the firehouse is pretty tough to beat in the first place.
I like the two of them better than Linkwood which a lot of people rave over.
Our church cooks them the Brookview way which is a might tasty as well.
The dinners sell out so fast at Brookview/Eldorada pre order is a must if you want to have some.
Should be a cook coming up soon at Eldorada, great for lunch after some morning bow hunting.

Some of the plates at Mardela in that shack by the rest stop used to be good to but those folks are prolly long gone by now. That was the real deal right there for country cooked chicken back in the day.

I should try it again. Ours was simply over brined to a salty mess now that I thought about it…
I would not brine the chicken, but use skinless, boneless breasts. A little old bay(or whatever your fav seasoning is) and a little olive oil and fry in a skillet.
