    Home made Canadian Bacon. I just got this finished and out of the smoker. This was my first time so I only made one. It is from a pork tenderloin. Made a brine which had maple syrup, among other things. Came out nice, a little heavy on the smoke, but still very tasty. Next time I might cut back on the smoker time a bit.
