You don't have to back out of it. Just don't do it... Your unit will continue to work without the latest version.

I got a 4s and have yet to update it. The problem with that is I can't download alot of apps cause of it but at least my phone works just fine.

How many updates is your settings tab saying you need?

The problem with not updating is that updates reveal vulnerabilities via the existence of a patch.
