Got some marinating in diet Pepsi at the moment. Will salt/pepper and toss them in the smoker tomorrow. Haven't decided on whether I will teriyaki them, or spicey Thai chili.....wanted to go hunting this week, in the mornings, but my body said nah....my wife feeds them from her window sill...both of.these failed to make it back across the road...somehow they both were headshots by two different cars...maybe gross to some, but since they weren't mangled and super fresh, win win.

Squirrels are natural athletes. Asking for their meat not being tough is like asking for something unnatural. Have you seen obese squirrels that can't run or jump or climb? I don't eat squirrels until we have Depression 2.0.

Went with fresh yeast rolls, butter and honey. Decided on Korean barbecue for the squirrel. Had one whole, and the thighs from the second. Pretty dang tasty. Lean muscle meat. Wife and daughter wanted no part of it, not even a taste. Pretty sure they know it will taste good, and don't want to admit it. That's ok.

A mess of squirrels to feed two. Unless you're really hungry. Then you're gonna need a whole mess of squirrels.

That's what my Grandma told me.
On a serious note, IIRC an average sized grey is somewhere around 4-5oz for the hind quarters, around 7oz for the whole squirrel for the meat cleaned up and boned out. That'll cook down some.

So, depends on how much meat you are planning to eat. A small grey might be 2-3oz and 4-5oz total, a really big one might be 5oz of the hindquarters and 8-9oz total off the top of my head.

I don't typically eat a ton of meat in a meal. So, two squirrels would be a serving size, at least if there was other food in there. I don't typically eat just a burger patty or steak with nothing else. If ALL you were eating was squirrel, 4 would be a nice solid meal for a hungry adult.

I've only had squirrel twice. No way I'd just broil them. I can't think of any meat that is good that way. Stewing maybe, but that ain't the same thing. Fried, pot pie, or just pan seared with some salt, rosemary, and olive oil IMHO are the three best ways. Though I can only say I've heard fried is good as I haven't tried it that way (I have had squirrel pot pie and pan seared). At least the couple I pan seared the hind quarters, it was very tender. Consistency of decent chicken. Tasted like an earthy chicken. Heck, was more tender than the ~15 month old roosters I culled and cooked.

Killing them with 22s is the best bet. I always hate picking shot out of anything, and double annoying out of something little like a squirrel.

I’ve eaten my kills but the joy I get from watching the dogs eat the squirrel meat is much better.

For something truly culinarily interesting, in Peru they eat guinea pigs. I bet a guinea pig recipe would work pretty decent for squirrel, they're both rodents and of similar size. Never have tried it myself so ymmv

I like squirrel pot pie. Use the same recipe as chicken pot pie and just use squirrel. (parboiled and picked off the bone) Homemade crust will make your tongue slap your brains out.
