Undecided on a great many things
I had the itch to learn to use the entire critter and finally came up with something I like. The wife is going to change the recipe to get it more like braunschweiger for next year, but 1 heart, 1 liver, 2# ground deer and 2# pork fat and I have 7.5# of Liverwurst to eat and give away. $1 worth of pork fat and $3 of casings makes it pretty cheap to make.
