Basic no frills GI ... can't beat the Rock Island
This. I have 2 of them and have never had one issue. They run steel Tula just as well as they run brass. Flawless performance so far.

My vote would be for an original series 70.
I have a Rock Island Officers model in 9mm and I just picked up a Full size Rock Island GI in .45acp. Both are nice guns and the fit and finish is nice, and the slides are tight. The 9mm is a great shooter, I have now shot the .45 yet but I have heard great things... here is a pic of the .45

I loved my Rock Island GI. Fantastic for the money. I also love my Colt 1991 series Government Model, model number O1991. USA Colt quality at a reasonable price tag. It's just a nice basic shooter that looks good doing it. Accuracy has been great for me. About 2000 rounds down range and only one stoppage with a hollow point from a cheap mag.

Another vote for Rock Island, but I might be biased.
The Philippines has a long history manufacturing the 1911 pattern, and it's still an issue side arm there. My RI GI has been flawless. It's not top of the line, it could use some polishing, it's just a no-frills parked finish. But it functions just like it should and I paid less than $300 for it. I won't name names but I've been to the range with guys that spent far, far more on US models that had teething issues.
As others have said, the standard GI sights are probably the one downside but RI offers other models.
