If you’re going to do it, do it right.

Boos wood cutting board 18 by 24 by 2 inches thick.

    Cutco knives.

The Boos board can take anything you throw at it (including my Cutco meat cleaver) and will last forever without any problems if you clean and take care of it (mineral oil, etc).

Shun occupies my knife block. I sharpen them 2-3 months to keep them trucking through the daily duties of dinner prep.

    Another vote for Victorinox/Forschner

Fyi America's Test Kitchen rated them #1 in affordable kitchen knives. If you do some Google searching, you can find them cheaper than Amazon. An 8" chef's knife should run you $35.

Always been a fan of wusthof classics...got one about 15 years ago 50% off at wegmans and been my best knife since. Holds a strong edge and easy to sharpen . I recently purchased a vitronox and find myself pulling that out more than the wusthof. It’s much lighter but very comfortable. Dexter also have a good easy to sharpen sharp steel. Invest in a few sharpening stones and you’ll be good to go.

A lot of this depends on what angle you like, what handle style, etc., but I'm a big fan of my Globals. Definitely hold one to see how you like the handle before you get yourself a set, but I can confirm that they hold an edge like nobody's business, and I find them very comfortable to hold.
