Okay guys I'm totally clueless on this topic...

is there a way to have a universal mount on several rifles and optics, that way I can switch between scopes, EoTech 512, etc., for various rifles and keep close to zero when I remount?

    Thanks

There is no universal multi brand cross platform system that I’m aware of.

I swap between a Vortex Razor Holo, which has its own QD rail mount, and a 1-4 Pst with a Larue QD Mount. They both seem to hold zero after repeated swaps. I’ve also got am ADM QD mount on a longer range setup. I remove that scope in order to transport. It always returns very close to zero. Probably within .1 mil

If all of your devices have solid QD mounts you should see repeatable RTZ.

If you want to put an Eotech and a scope on the same rifle, you’ll need a Picatinny type rail on the rifle. I’d advise against that for good qd rings and mounts, I’d look to Leupold.

Multiple optics for one rifle with holding close to zero is possible.

Multiple optics for multiple rifles and holding close to zero is MUCH harder.

The ModZone mount mentioned seems to allow you to adjust the mount to zero, versus the optic. But it is not yet available. And $260 per rifle. And then you need a QD mount on each optic.
