Had a sharpening session today. Kitchen knives, EDC's, etc.
Took a short video of their sharpness for kicks.

Good lord. What device do you use? Guessing that grinder in the background has something to do with it.

Haha precisely! I profile on a 1000 grit belt and finish it with a leather belt with a compound. The compound makes it equivalent to 55,000 grit. Hold as best I can at a 15-22 degree angle and take my time. All my knives end up this way now if I could just find a way to permanently keep them there...

Nice slicing, nice dicing. I'm not much one for paring knives, but I do love large, strong folding knives and fixed blade knives. When it comes down to it, if you can't kill a black bear with it, I most likely won't put it on my Christmas list.

The Wife has come around to understand that a properly-sharp knife is less dangerous than a dull knife.

Also, The Wife understands how difficult it is to clean blood off the cutting board.

I have 5 EDC knives I have in rotation (cheap one's) 15.00 each or so . I never get them that sharp but I use the hell out of them and sharpen 3 or so a week . I may get a Ken Onion system .
