I had a similar career path and worked in a veterinary clinic through high school and college as a lab technician. That paid well and looked great on a resume if she want to get into the sciences.
Your analogy is perfect. Sure you can start with a do it all SV650 and have a great time riding, touring, maybe even a few track days. After some time you want a liter bike to really feel what 200hp is like. There is no reason the dump the SV though. Then the novelty of a sport bike does not...
I just passed the Texas certification. It is a well thought out straightforward process. The total price is ~$35. The only problem is it expires October 9, 2020. I probably should have waited to take the course.
