I typically just lock the slide in a vice and then use a hand-clamp with a pusher-dowel to squeeze sights on or off. Works like a charm and you can make pretty small adjustments this way. Plus if you do any woodworking, you should already have plenty of clamps clamped around.
Shoot with both eyes open so the dot is superimposed on the target and you fill in the gaps you're missing with your non-dominant eye. You could put tape over the front of your red dot and still place shots on target just fine. It's the old school aim point method.

What's the front locking block area look like? It's fuzzy in the pictures above. Other question after seeing the plate... does the striker plunger freely move up and down? I'm wondering if the striker is interacting with the plunger in a way that's blocking its travel.
